Oven Roasted Potatoes
Cooking Time: 60 Minutes; Yields 2-4 People
Ingredients
30-40 fingerling potatoes; halved
5-6 sprigs thyme; leaves only
salt and pepper
olive oil

Cooking Instructions
1. Start by pre heating your oven to 425 degrees F and find a 8x8 pan
2. Half all of your small fingerling potatoes and place into the pan.
3. Coat the potatoes with olive oil, sprinkle with thyme leaves, salt and pepper. Give everything a big toss so all the potatoes are coated evenly
4. Place the potatoes into the oven and cook for 60 minutes or until fork tender and golden brown.
***TIP: After 20 minutes in the oven give the potatoes a toss to keep them from sticking to the bottom of the pan, and to allow the potatoes to brown on all sides while roasting.
5. This is a great side dish but also pairs wonderfully with my "perfect roasted chicken" recipe. It also is a super affordable meal...this side only cost about $6-$8, perfect for an affordable date night!
