Honey Roasted Carrots
Cooking Time: 40-60 Minutes; Yields 2-4 People
Ingredients
6-10 carrots; peeled cut into sticks
2-3 T honey
2 heavy pinches fox point seasoning; Penzeys Spice
olive oil

Cooking Instructions
1. Start by pre heating your oven to 425 degrees F. Also get an 8x8 or 9x13 pan to roast your carrots in.
2. Peel all your carrots and then cut them into sticks. I normally half the carrot and then quarter them, but the carrots in this picture were HUGE so I half the quarter pieces (hopefully that makes since).
3. Place the carrots into the pan. Coat with olive oil, honey and fox point seasoning.
***TIP: Fox Point seasoning is from Penzeys Spices. Y'all this is one of my favorite spice mixtures EVER!!! It goes really well on pork, fish, veggies, chicken, etc. It is really worth the buy, I promise it won't let you down.
4. Mix everything thoroughly so all the carrots are coated and place it in the oven. Cook for about 20 minutes and give the carrots a small toss, and finish cooking until fork tender.
5. This is also another affordable side, about $6, and fits perfect with my "roasted potatoes" and "perfect roasted chicken" recipes. These dishes all cook at the same temperature and the oven does all the work. Plus you can impress you're significant other with this rustic masterpiece!
