Spinach and Artichoke Dip
Cooking Time: 60 Minutes; Yields 6-10 People
Ingredients
2 cans whole artichoke hearts; chopped
1/2-1 c. frozen spinach; thawed and chopped
16 oz cream cheese; room temperature (two blocks)
1 c. parmesan cheese; ground
1/2-1 tsp red pepper flakes (depends on how spicy you like it)
1 tsp salt
1 tsp garlic powder
1/2 tsp black pepper
1 pkg crackers (to serve with)
1 baguette; sliced and browned (to serve with)

Cooking Instructions
1. Pre heat oven to 350 degrees F. Find a glass baking dish with a lid, or an 8x8 baking dish that you can cover with foil. Spray the baking dish with Pam so the dip won't stick when baking.
***TIP: The glass baking dishes I added to purchase are hands down one of my most used items in my kitchen. I use it for non cooked layered dishes, baked dishes, and for my favorite green bean casserole during Thanksgiving. It's worth $15.39!!

2. Place the frozen spinach package into a microwave safe bowl, and thaw for a couple minutes. Once you the spinach is thawed, and you are able to handle it without burning your hands, squeeze all the excess liquid out of the spinach and place on a paper towel.
***TIP: The reason I buy frozen spinach vs fresh spinach is you get more bang for your buck. It is A LOT cheaper to buy frozen spinach.
***TIP: If you don't remove the excess water from the spinach your dip with be watery. Also, you will be amazed how much water spinach holds!

3. Now lets focus on the artichoke hearts...place water into a medium size sauce pan and bring to a boil. Place the artichokes into the boiling water, and boil for 10 minutes.
4. After 10 minutes, strain the artichokes hearts and chop.
5. So you don't dirty another bowl I just mix all the ingredients into my baking dish before baking. Add the cream cheese, thawed and chopped spinach, warm/chopped artichoke heart, parmesan cheese, red pepper flake, salt, garlic powder, and pepper to the baking dish. Mix everything thoroughly and place the lid or foil on the baking dish.
6. Place the baking dish into the oven for 30-45 minutes or until bubbly. I also like to remove the lid for the last 10-15 minutes, because I like the top of the dip to brown up a little before serving.
7. Remove the dip after it has finished cooking and serve with your favorite crackers, or if you are feel ambitious serve with a baguette you have sliced and toasted.
***TIP: I buy two baguettes when I do this, because I ALWAYS seem to burn half of the bread in the broiler. Yep, I make mistakes too!!! My motto is..."mistakes are proof that you are trying!"
