Simple, Fast, and Very Nutritious...Even Kid Approved!!!

Zucchini & Tomato Pasta

Cooking Time: 20 minutes; Yields 6-8




Ingredients 
2 T olive oil
1 yellow onion; diced
3 garlic cloves; diced
1 zucchini; chopped
1-2 pkg cherry tomatoes; halved
1 cup arugula; chopped
1 pkg campanelle pasta (or any kind of pasta you have on hand, I just like this noodle shape)
salt and pepper; to taste
ground parmesan cheese; to top pasta when serving

Cooking Instructions

1. Fill a large sauce pot half way up with water and about 4 T of salt.  Place the sauce pot over medium high heat and bring to a boil.  

2. When your water reaches a boil cook your pasta to al dente.  Al dente is a reference to food being still slightly firm when bitten into.  Also, by salting your water it will flavor your pasta when boiling; FUN FACT OF THE DAY!!!  

3. Now lets start our sauceless and very fresh pasta dish.  Place a large, deep sauté pan over medium heat.  Add your olive oil to the warming sauté pan.



4. When your olive oil is nice and hot add your onions and cook for 3-4 minutes.  Then add your garlic and zucchini and cook that for 3-4 minutes.  Finally add your tomatoes and cook those for 3-4 minutes.  Y'all this is coming together fast and fierce!!! 





5. Lets season our veggies with some salt and pepper (about 1 tsp of salt and 1/2 tsp of pepper).  Give it a small taste and see if you need to add more of either salt or pepper.  Remember your pasta and parmesan cheese will also give another layer of salt so keep it light.   

6. Strain your now cooked pasta and add it to the sautéed veggies.  Also, add your chopped arugula and cook for about 1-2 minutes.  The heat from the pasta will wilt down the arugula leaves, don't worry that is a good thing!



7. Give it all one more last stir and taste for seasonings.  Place pasta in individual bowls and top with ground parmesan.

8. Enjoy!!! 

***TIP: This dish was inspire from a fall farmers market; and I needing to use up ingredients in my pantry before they went bad.  Also, don't you dare turn your nose up to this until you try it.  My cousin (cough cough Lee) tried to tell me he didn't like tomatoes or zucchini and he LOVED IT!!  

***TIP: This also makes great left overs, so make a large batch!!
